Students can go to portal.office.com, log in with their <username>@my.gvltec.edu email address and password, then follow the prompts to install Microsoft Office. Documents/spreadsheets/etc. can also be created online via web apps once students are logged in.
Faculty and staff can do the same by logging in with <username>@gvltec.edu email address and password.
